Imagine standing on a hill, cocktail in hand, with a panoramic view of the mountains—then sitting down at a single, elegantly set table for 50, right in the middle of a farmer’s field.
Just another of Dave Gibeault’s inspired entrepreneurial creations:
La Tablée des Jardins Bolton / Garden to Table Suppers.
In 2017, Gibeault purchased land in Bolton-Est to pursue a deeply rooted, back-to-the-land dream. That dream was forged through:
- a year of law studies,
- two years in the Saguenay,
- time at Montreal’s Marché Jean-Talon,
- farm labour near Ottawa, and
- a final test run in Lanaudière to see if he could truly build an eco-responsible farm of his own.
The answer was yes.
Les Jardins Bolton was born—and now, in its ninth season, it cultivates more than 40 varieties of fruits and vegetables, all grown sustainably and ethically, and produces eggs from free-range chickens.
A Meal Like No Other
The Garden to Table Suppers offer an unforgettable evening of five or six courses, prepared on-site by chefs Samuel Hansquine and Philippe Lacroix of Terra Nova. Meals are cooked over a wood-fired stove, handcrafted by artisan Pierre Nadeau—just imagine the aroma.
Each course is paired with a different local wine, and all ingredients are grown or raised nearby:
- Chicken and grass-fed lamb from Les Pâturages du Lac Brome
- Lean, protein-rich yak meat from Yakity Yak
- Tableware created by local potter Guillaume Morin
Every Saturday from June 28 to August 30, the menu will change to highlight the freshest seasonal ingredients.
Two vegetarian evenings are planned: July 12 and August 9.
And on select nights, the six-course meals will include culinary workshops or demonstrations.
Not a Picnic — A Gastronomic Experience
These are not rustic picnics, but gastronomic events—a celebration of community, nature, and eco-responsibility. They offer something wholly different from the traditional restaurant experience.
In recognition of his work, Dave Gibeault was named a Chevalier of the Ordre National du Mérite Agricole in 2024.
